Last week I let you in on what I eat during a work day. This week I'm not away on holiday like I will be next week but I'm just home, doing nothing and wasting my time. So as promised, here is a look at what I eat on a day during a vacation week.
Something that's important to keep in mind is that when I'm home, and don't have to stick to a routine like I do when I go to work, I eat when I want to, when I feel hungry. And that doesn't always line up with the time you're 'supposed' to eat. For example, I woke up around 10 am this particular day. But I only had breakfast at 11:40 am. So it was basically lunch. Pre-breakfast: Water with mint and lime
Starting your day with this a big glass of water is really good for your body, and it's something I do all the time on weekends and during holidays. Adding mint and lime or lemon makes it even better and somehow seems to motivate me to drink the whole thing.
Breakfast: Smoothie bowl - 11:40 am
A smoothie bowl is one of my favourite breakfasts when I'm in the mood for something light and fresh. This was also incredibly easy to make:
2 frozen bananas, frozen mixed berries, 1 regular banana, mango, cacao powder and almond-coconut milk. Topped with banana, mango, chia seeds, almonds and raisins. Not the prettiest, but oh boy was it delicious.
Snack: Leftover fruit from smoothie bowl - 12:30 pm
Do you need an explanation here? I don't think so. The fruit was still lying there from breakfast. I saw it. So I ate it.
Lunch: Potatoes with carrots and peas - 3:45 pm
Pretty late lunch today. I wasn't really hungry until around 3 so I just didn't eat until then. There were some leftover potatoes from dinner the day before so I decided to pop those in a pan along with some onion, carrots and peas and voila! Lunch is served. It may look like a lot of potatoes, and to be honest it was because I didn't finish it all.
Dinner: Vegan yogurt and muesli - 7 pm
Did I try and make it pretty for you instead of just mixing everything together like I normally do? Yes. Did it work out for me? Not really. But that's not the point. Breakfast for dinner is always a good idea in my book so voila. I wanted something light after lunch so this was perfect. It's passion fruit vegan yogurt, bananas, muesli, raisins, mixed nuts and chia seeds. Yum.
Snack: A nutella sandwich - 9 pm
